INGREDIENTS

  • 2 tbsp oil
  • ¼ cup onion
  • ¼ cup tomato
  • ½ cup broccoli
  • ½ cup soya bean keema soaked
  • ½ tsp coriander powder
  • ½ tsp turmeric powder
  • ½ tsp red chilli powder
  • ½ tsp black pepper powder
  • salt
  • 1 tbsp coriander
  • 2 eggs
  • 1 to 2 tsp milk
  • 1 tsp oil
  • Decorative carrot flower
  • 1 sprig coriander
  • Tomato sauce and cream cheese mixture

PREPARATION

    In a non stick pan heat oil. Add chopped onions and sauté until transparent. Add chopped tomatoes blanched and chopped broccoli, and soaked soya bean keema, and cook well. Season with coriander powder, turmeric powder, red chilli powder, black pepper powder, and salt. Add chopped coriander leaves mix well and switch off the flame. In a bowl, beat the eggs with milk and salt. In another non stick pan, heat oil. Make an omelette using the beaten egg mixture. Transfer the omelette to a plate, keep the filling in the centre, and slowly wrap the omelette into a roll. Cut the roll into medium sized pieces. Arrange the pieces in the serving plate. Garnish with decorative carrot flower and sprig of coriander. Serve with tomato sauce and cream cheese mixture.
