INGREDIENTS

  • For smoked yoghurt soup
  • 1 cup curd
  • 2 - 2 1/2 tbsp extra virgin olive oil
  • 1/2 tsp fenugreek seeds
  • 1/2 black mustard seeds
  • 10 - 12 curry leaves
  • 1 tbsp curry powder
  • 1 tsp green chilli
  • 3 tbsp finely chopped celery
  • 1 chopped carrot
  • 1 chopped onion
  • salt
  • For soup
  • 1 tbsp olive oil
  • 2 tbsp chickpea flour
  • 1/4 tsp curry powder
  • 1/4 cup water

PREPARATION

    In a pan add wood shavings. In a bowl, add curd and place the bowl in the pan.

    In another heated pan, add extra virgin olive oil, fenugreek seeds, black mustard seeds, curry leaves, whole red chilli and stir it. Add curry powder, finely chopped green chilli, celery, carrot and toss it. Add finely chopped onions.

    Extract the red chilli from the pan. Add salt as per taste and toss it.

    In a pan, add olive oil and let it warm. To the smoked curd add chickpea flour and mix it. Add the curd in the pan. Add curry powder, water and let it boil.
  5. 5

    Serve the yoghurt curry with vegetable mixture and garnish with basil and coriander leaves and sprinkle curry powder.
