INGREDIENTS

  • 2 Carrots
  • 2 Turnips
  • 250 gms Cauliflower
  • Water
  • Salt
  • 250 gms Green Peas
  • 6 tbsp Mustard oil
  • 1 cup Vinegar
  • 1 cup Jaggery
  • 2 tbsp Ginger paste
  • 1 tbsp Garlic paste
  • 100 gms Yellow Mustard seeds
  • 1 tsp Deggi Mirch powder
  • 1 tsp Garama Masala
  • 1 tbsp Black Salt

HOW TO PREPARE SHALGAM GAJAR GOBHI KA ACHAR

    Cut turnips and carrots into 5 to 6 cm batons and add florets of cauliflower, green peas and blench them for 1 to2 minutes in salted water.

    remove and pat dry.
  3. 3

    heat mustard oil oil in a pan, add ginger paste, garlic paste, yellow mustard seeds, deggi mirch powder, garama masala, black salt and stir.

    add vegetables in the spices mix and fry.
  5. 5

    in a bowl mix vinegar and jaggery and add it the pan and cook till done.
  6. 6

    cool the pickle preserve it in a clean, dry jar.
