INGREDIENTS

  • 1 surmai fish
  • 1 Lemon wedge
  • Few thyme leaves
  • 3 to 4 egg white
  • Few rosemary leaves
  • Sea sal
  • Chives
  • Lemon wedges
  • Basil leaves
  • olive oil

PREPARATION

    Stuff the fish with a lemon wedge and thyme leaves for flavour. Mix sea salt and egg white in a bowl. Line a baking tray with aluminium foil. Spread the sea salt egg white on this foil to give a crust base for the fish. Place the fish on this base. Add some rosemary leaves in the remaining sea salt mixture and mix. Apply this mix on top of the fish and make a crust. In a pre heated oven, bake the fish for 50 to 55 minutes at 180C. Once baked, discard the sea salt crust and the skin of the fish. Separate bones from the fish. Transfer to a serving plate. Garnish with chives lemon wedges, basil leaves, and olive oil.
