Sasrut & Gulra

Sasrut and Gulra are the two traditional sweets usually prepared during Dogra weddings. Here Chef Ajay Chopra shares the recipes for these two mithais. Both these dry fruit rich sweets made in pure ghee are super delicious.

INGREDIENTS

  • FOR Gulra
  • 2 tbsp ghee
  • Few almonds
  • Few cashew nuts
  • Few pistachios
  • 4 to 5 green cardamoms
  • 1 cup semolina
  • ½ cup desiccated coconut
  • ½ tsp dry ginger powder
  • Few dried coconut slivers
  • 1 cup of sugar
  • FOR Gulra
  • 100 gm dry coconut chips
  • Ghee & 1 cup maida
  • ½ tsp dry ginger powder
  • ½ cup desiccated coconut
  • 1 tsp fennel
  • 2 tbsp chopped almonds
  • 2 tbsp chopped pistachios
  • 2 tbsp chopped cashew nuts
  • 2 tbsp sugar
  • 1 tsp poppy seeds

HOW TO PREPARE SASRUT & GULRA

  1. 1

    In a heated pan, add ghee and let it warm. Crush the almonds, cashew nuts, pistachios, green cardamom in a mortar pestle.

    Add the crushed dry fruits in ghee and saute. Add semolina and cook evenly with the dry fruits. Add desiccated coconut, ginger powder, dry coconut slivers and sugar.

    For Sasrut, in a pan, add dry coconut, ghee and let the coconut get roasted.
  4. 4

    For the dough, add maida in a bowl. Add dry ginger powder, desiccated coconut, fennel seeds, chopped almonds, pistachios, cashew nuts, sugar, poppy seeds and mix all the ingredient.

    Add ghee and make a soft dough using water. Flatten the dough and make small disc using dry flour.
  6. 6

    In a pan, warm ghee and add Sasrut in it and cook it from one side only. Place the coins on Sasrut and roasted coconut chips.
  7. 7

    Keep pouring ghee on top of Sasrut so it gets cooked evenly from both sides.
  8. 8

    Gulra and Sasurat are ready to serve.
