INGREDIENTS

  • For dough
  • 200 gms refined flour
  • 2 tbsp butter
  • to taste salt
  • 1 tsp sugar
  • water
  • For filling
  • 2 tbsp butter
  • ½ tsp cumin
  • 100 gms soya chunks
  • 1 potato
  • 30 gms green peas
  • 30 ml vegetable stock
  • 1 tsp dried oregano
  • 2 tsp aji amarillo chilli paste
  • 2 tbsp gelatin
  • frying vegetable oil
  • For garnish
  • 1 tbsp colby cheese
  • 2 tbsp tomato salsa

PREPARATION

    In a bowl, add refined flour, butter, salt as per taste, sugar and mix it.

    Add water and prepare a dough.
  3. 3

    Cove the dough with a cloth a let it rest.
  4. 4

    In a heated pan, add butter, cumin seeds, soya chunks and mix it well.
  5. 5

    Add green peas, boiled potato, vegetable stock, dried oregano and toss it.

    Add Aji Amarillo chilli paste and toss again.

    Add salt as per taste, soaked gelatin and mix.
  8. 8

    Let the mixture set in the fridge.

    Roll out the dough, add the diced filling, apply water on the edges of the dough and seal it.

    Freeze it for some time.

    In a bowl, add tomato salsa, cheese. Deep fry the Saltenas in the oil until it turns golden and serve with salsa.
