INGREDIENTS

  • 500 gm mutton
  • 2 cup of water
  • 4 cloves
  • 1 bay leaf
  • 1 cinnamon stick
  • 3 to 4 green cardamom
  • 1 tsp salt
  • 2 tbsp ghee
  • 3 to 4 mathaniya chillies
  • 1 sliced onion
  • 1 tsp ginger garlic paste
  • 1 cup curd
  • 1 cup full-fat milk
  • ½ cup khoya
  • 1 cup cashew almond paste
  • ½ cup cream
  • few strands saffron
  • For garnish
  • silver vark

PREPARATION

    In a pan, add mutton, water, cloves, cinnamon stick, bay leaf, green cardamom, salt and let it cook.

    In another pan, add ghee, dry mathaniya chillies, sliced onions and saute. Add the boiled mutton, ginger garlic paste, curd and mix the ingredients well.

    Add full-fat milk and mutton stock and stir it. Add khoya, cashew almond paste and let the mutton cook till it is done.

    Add cream and saffron. Garnish Safed Maans with silver vark and chopped dry fruits.

    Serve Safed Maans with Kesari Bhaat.
