INGREDIENTS

  • 2 cup Rice
  • 2 tbsp Ghee
  • 2 Cinnamon sticks
  • 6 to 7 Green Cardamom
  • 2 to 3 Black Cardamom
  • ½ tsp Cloves
  • 3 Bay Leaves
  • ½ kg Lamb Shanks
  • 3 cups Mutton stock
  • 10 Kashmiri Onions
  • ½ tsp Kashmiri turmeric powder
  • Salt
  • 2 tbsp Kashmiri Red Chilli paste
  • 2 tbsp Ginger Juice
  • 2 tbsp Garlic Juice
  • 1 tsp Fennel powder
  • Few Saffron strands

HOW TO PREPARE ROGAN JOSH

    In a pan warm ghee add cinnamon sticks, green cardamom, black cardamom, cloves, bay leaves and fry.

    add lamb shanks and sear them well, add mutton stock and let it boil.
  3. 3

    add mutton stock, chopped kashmiri onions, kashmiri turmeric powder, salt, kashmiri red chilli paste and let it boil.

    add ginger juice, garlic juice, crushed black cardamom seeds and cook till it becomes fork tender.
  5. 5

    in the end add fennel powder and saffron and strain the gravy.
  6. 6

    serve hot rogan josh with rice.
