  • FOR Roasted Bombils
  • { 4 Bombay ducks, Salt, 1 tsp red chilli powder, ½ tsp turmeric powder, 1 tsp lemon juice, 2 tbsp rice flour, 1 cup semolina, 1 tsp oil};
  • FOR Salad
  • { 1 chopped cucumber, 2 chopped green chillies, 1 blanched tomato, 1 chopped green bell pepper, 4 to 5 black olives, 3 tbsp Yogurt, 1 tsp lemon juice, Salt, 1 tbsp roasted peanuts, Few lettuce leaves}

    In a bowl marinate Bombay ducks (bombil) with salt, red chilli powder, lemon juice, and rice flour.

    ; Coat the marinated bombil with semolina.

    ; On a silicone sheet, drizzle oil and place bombil.

    ; Bake bombil in a preheated oven at 180 C.

    ; For salad, combine chopped cucumber, green chillies, blanched tomato, green bell pepper, black olives, yogurt, lemon juice, salt, roasted peanuts, and lettuce leaves in a bowl.

    ; Mix well.

    ; Serve roasted bombil with salad.

    ; Garnish with peanuts, coriander leaves, and lemon wedges.
