  • FOR Roasted Bombils
  • 4 Bombay ducks
  • Salt
  • 1 tsp red chilli powder
  • ½ tsp turmeric powder
  • 1 tsp lemon juice
  • 2 tbsp rice flour
  • 1 cup semolina
  • 1 tsp oil
  • FOR Salad
  • 1 chopped cucumber
  • 2 chopped green chillies
  • 1 blanched tomato
  • 1 chopped green bell pepper
  • 4 to 5 black olives
  • 3 tbsp Yogurt
  • 1 tsp lemon juice
  • Salt
  • 1 tbsp roasted peanuts
  • Few lettuce leaves

    In a bowl marinate Bombay ducks (bombil) with salt, red chilli powder, lemon juice, and rice flour.

    Coat the marinated bombil with semolina.
  3. 3

    On a silicone sheet, drizzle oil and place bombil.
  4. 4

    Bake bombil in a preheated oven at 180 C.

    For salad, combine chopped cucumber, green chillies, blanched tomato, green bell pepper, black olives, yogurt, lemon juice, salt, roasted peanuts, and lettuce leaves in a bowl.

    Mix well.

    Serve roasted bombil with salad.

    Garnish with peanuts, coriander leaves, and lemon wedges.
