In a pan, heat 1 tbsp oil, 1 tbsp coconut oil and add ½ tsp mustard seeds, ½ tsp cumin seeds, 2-3 dried red chillies and mix well. Add 1 tbsp chopped ginger, 1 tbsp chopped onions, 8-10 curry leaves, 2 tbsp ground split red gram, 2 tbsp split black gram and mix well. Add 1 tsp asafoetida, 1 tsp red chilli powder, 1 tsp turmeric powder, 1 tsp coriander powder, salt and mix well. Add ¾ cup broken rice and sauté well. Add water sufficient to cook the rice and cook for 10-12 minutes. Add chopped 2 spring onion stalks and mix again. Serve the Rice Upma on a plate and garnish it with a coriander sprig and a mint sprig.
