INGREDIENTS

  • 2 eggs
  • 2 tsp vanilla essence
  • ½ cup rice flour
  • 1 tsp baking powder
  • 1 cup condensed milk
  • ½ cup mango pulp
  • 1 cup boiled brown rice
  • 1 tbsp cardamom powder
  • salt to taste
  • For Garnish Condensed milk
  • Mango pulp
  • chopped almonds

PREPARATION

    In a bowl beat eggs and a few drops of vanilla essence. Add rice flour and baking powder. Beat again till the mixture thickens. Add condensed milk, mango pulp, boiled brown rice, salt, and cardamom powder. Mix well. Transfer the pudding mixture to different moulds. Place the moulds in a baking dish and bake for 15 min at 180 C in a pre heated oven. Once baked, allow the pudding to cool unmould them. Make a layer of condensed milk and mango pulp in the serving plate. Place the pudding on it. Pour some condensed milk on the pudding. Top with some roughly chopped almonds. Serve the rice pudding.
