INGREDIENTS

  • 1 cup leftover rice
  • 2 tbsp corn
  • 1 tbsp coriander leaves
  • 1 tsp green chillies
  • 1½ tbsp onion
  • salt
  • 1 tsp cumin powder
  • 1 tsp red chilli powder
  • 2 tbsp cheese
  • 2 tbsp paneer
  • 2 tbsp breadcrumbs
  • For sauce
  • ½ cup tomatoes
  • 1½ tbsp onions
  • 1½ tbsp coriander leaves
  • 1 tsp green chillies
  • 1 tsp garlic
  • 1 tbsp orange zest
  • 1 tbsp sugar
  • 4 to 5 black olives
  • 1 lemon juice
  • salt
  • black pepper
  • orange juice
  • For batter
  • ½ cup refined flour
  • salt
  • black pepper
  • 1 tsp red chilli powder
  • water
  • For garnish
  • 3 to 4 lettuce leaves
  • 5 black olives

PREPARATION

    In a mixing bowl add boiled and mashed rice, chopped corn, chopped coriander, chopped green chillies, chopped onions, salt, roasted cumin powder, red chilli powder, grated cheese, grated paneer and breadcrumbs.

    For the salsa sauce: In a mixing bowl, add chopped tomatoes, chopped onions, chopped coriander leaves, chopped green chillies, chopped garlic, orange zest, chopped black olives, orange juice, salt, crushed black pepper and orange juice.

    Mix them well and allow it to rest for 10 to 15 minutes.

    For the batter: In a mixing bowl, add refined flour, salt, crushed black pepper, red chilli powder and water. Mix it well and keep it aside.

    For the croquettes: Make small balls from the prepared rice mixture and dust refined flour over it.

    Dip the prepared rice balls into the batter and coat them with breadcrumbs.

    Deep fry the prepared rice croquettes in oil and fry until they turn brown.
  8. 8

    Place them on a tissue paper to remove excess oil.
  9. 9

    Serve salsa sauce in a bowl.

    For garnishing: Trim lettuce leaves and place them onto a plate with the fried croquettes.

    Then arrange black olives in the skewers and place it on the croquettes.
