Rangooni Vaal aur Kharak nu Raitu

Rangooni Val is a curry made with butter beans, and Kharak nu Raitu is raita made with dates. Chef Ajay Chopra shares recipes for both these dishes. Rangooni Val is sweet & sour and goes exceptionally well with the sweet & tangy Kharak nu Raitu.

INGREDIENTS

  • ½ tsp ajwain & ½ tsp mustard
  • Pinch of asafoetida
  • 1 sprig curry leaves
  • 1 tsp red chilli powder & 1 tsp coriander powder
  • Salt as per taste
  • 200 gm Vaal (Overnight soaked)
  • 2 cups of water
  • Few whole amchur Pieces
  • ½ tsp turmeric
  • 2 tbsp jaggery
  • ½ tsp garam masala powder
  • FOR Raitu
  • 2 cups curd
  • 1 cup dates (Overnight Soaked)
  • Salt as per taste
  • 1 tsp red chilli powder
  • ½ tsp garam masala powder

HOW TO PREPARE RANGOONI VAAL AUR KHARAK NU RAITU

  1. 1

    In a pan, add oil, ajwain, mustard seeds, asafoetida, curry leaves, red chilli powder, coriander powder, salt and mix it well.

    Add soaked val, water, dry mango powder and let it cook Add turmeric powder, jaggery and let it cook until its done Add garam masala powder and mix.
  3. 3

    For Kharak nu Raitu, in a bowl, curd Add overnight soaked dates, red chilli powder, salt as per taste and garam masala powder Stir it well and serve it cold.
  4. 4

    Garnish with coriander leaves and serve.
