Rajputana Dhokla

INGREDIENTS

  • 1 cup maize flour
  • ½ cup Yogurt
  • 1 tbsp sesame oil
  • 1 tsp asafoetida
  • 1 tbsp lemon juice
  • 3 to 4 Papads roasted
  • 1 cup green gram soaked
  • water
  • Hot water
  • salt
  • ½ tsp turmeric powder
  • ½ tsp red chilli powder
  • 1 tbsp mustard oil
  • 1 tbsp sesame oil
  • 1 tsp cumin seeds
  • 3 to 4 dried red chillies

  • dried red chillies
  • Coriander sprigs

HOW TO PREPARE RAJPUTANA DHOKLA

  1. 1

    In a bowl mix maize flour, yogurt, sesame seeds, asafoetida, lemon juice, crushed roasted papad, and hot water.

    Knead a dough.
  3. 3

    Make small balls from the dough and flatten slightly.
  4. 4

    Make a cavity in the centre of the dhoklas.
  5. 5

    Steam dhokla for 20 min.
  6. 6

    Dhokla is ready.

    In a pan, mix soaked green gram and water.
  8. 8

    Boil for 10 min.
  9. 9

    Once moong dal boils, season with salt, turmeric powder, and red chilli powder.

    Let dal cook.
  11. 11

    For tempering, heat mustard oil and sesame oil.
  12. 12

    Add cumin seeds and dry red chillies.
  13. 13

    Add the tempering to the dal.
  14. 14

    Blend the dal.
  15. 15

    Serve dhokla with moong dal.
  16. 16

    Garnish with roasted sesame seeds, sesame oil, dry red chillies, and coriander sprigs.
