INGREDIENTS

  • 6 to 7 Green Cardamom
  • 2 to 3 Cinnamon sticks
  • 2 to 3 Mace
  • 1 tsp Black Peppers
  • 6 to 7 cloves
  • Bay Leaves
  • 3 to 4 Stone Frower
  • 50 gm Khus Root
  • 4 to 5 Long Papper
  • Few Dried red Chillies
  • Few Paan Roots
  • 1 tsp Black Cumin
  • 1 tsp Dried Coriander Seeds
  • 3 to 4 Star Anise
  • 200 gm Kidney Beans
  • 1 tsp Red Chilli powder
  • Salt
  • 1 tsp Galouti Masala
  • 1 tsp Green Chilli paste
  • 1 tsp Cashew paste
  • 1 tsp Brown Onion paste
  • 2 to 3 tbsp Ghee
  • 2 tsp Roasted Gram flour
  • 1 Piece Coal
  • 3 to 4 cloves
  • 1 tsp ghee

HOW TO PREPARE RAJMA GALOUTI

    Roast green cardamom, cinnamon sticks, mace, black peppers, cloves, bay leaves, stone frower, khus root, long pepper, few dried red chillies, few paan roots, black cumin, dried coriander seeds, star anise in a pan. grind it and make powder. take overnight soaked, boiled rajma and make fine paste. add red chilli powder, salt, galouti masala, green chilli paste, cashew paste, brown onion paste saffron strands soaked in milk, pine water, tbsp ghee and mix it well. add roasted gram flour and knead into a dough. leave space in the middle for dhungar. to smoke, heat a piece of coal over the flame till it becomes red hot. place the coal in a small steel bowl. put 3 to 4 cloves and 1 tsp ghee on the coal. immediately cover with a lid and smike for few minutes. make small balls of it and press it with help of thumb and put it on tawa, let it cook on both sides and serve it with green chutney.
