INGREDIENTS

  • 1 cup blue citrus juice
  • 1½ cup mango juice
  • 1½ tsp agar agar
  • ½ cup pomegranate juice
  • 1½ cup black grape juice
  • Beaten curd
  • 1 cup water

HOW TO PREPARE RAINBOW

  1. 1

    In a pan add blue citrus juice to reduce it.
  2. 2

    In another pan, add mango juice to reduce it.
  3. 3

    In a small bowl, dissolve agar agar in water.
  4. 4

    Add dissolved agar agar in the blue citrus juice and mango juice.
  5. 5

    Stir well.
  6. 6

    After adding agar agar, transfer both juices in two different bowls.
  7. 7

    In other two pans, add pomegranate juice and black grape juice separately.
  8. 8

    Add a spoonful of dissolved agar agar to both pans, stir well, and transfer juices to two different bowls.

    In the serving plate, add the juices according to your favourite colours and give a nice swirl to spread colours around the plate just like a rainbow.

    Add beaten yogurt and swirl.

    Deep freeze the rainbow dish for 5 min and serve.
