INGREDIENTS

  • 1 cup Yoghurt
  • ¼ tsp Turmeric Powder
  • Salt to taste
  • 1 tsp Ginger Garlic Paste
  • 6 to 8 pieces Lamb Chops
  • 2 to 3 tbsp Ghee
  • 2 Bay Leaves
  • 2 sticks Cinnamon
  • 2 Black Cardamom
  • 1 Star Anise
  • 2 to 3 Cloves
  • 1 cup Chopped Onion
  • ¼ tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 1 tsp Coriander Powder
  • 1 tsp Ginger garlic Paste
  • Water
  • 2 tbsp Cashew Paste
  • 2 to 3 tbsp Tamarind Juice
  • 2 cups Mutton Stock
  • ½ cup Coconut Milk
  • Garnish with Potato Cylinder and green Coriander leaves

HOW TO PREPARE RAILWAY MUTTON CURRY

    Prepare the marinade by mixing yogurt turmeric powder, ginger garlic paste, and salt, marinate the lamb chops and refrigerate for some hours.

    Heat ghee in a pan and add bay leaves, cinnamon sticks, black cardamom, star anise, and cloves, add chopped onions turmeric powder, red chilli powder, coriander powder, and ginger garlic paste , sauté? till onions turn golden brown in colour, add the marinated mutton chops, cashew nut paste, tomato puree, tamarind juice, and mutton stock , cook on a low flame until done, add coconut milk quickly stir and turn off the flame.

    Garnish the mutton curry with potato cylinders, javitri masala, and coriander sprigs.

    Serve with steamed rice.
