INGREDIENTS

  • 1 cup quinoa
  • 1 pomegranate
  • 3 - 4 dried apricots
  • 1/2 cup walnuts
  • For dressing:
  • 2 tbsp lemon juice
  • Salt as per taste
  • 2 tbsp honey
  • 7 - 8 rocket leaves
  • 1 - 2 kale leaves
  • 1 tsp black pepper

PREPARATION

    Heat water in a pan. In a bowl add quinoa, boiling water and leave it to soak.

    In another bowl, add pomegranate seeds, chopped dried apricots, crushed walnuts and mix.

    For the dressing, in a bowl, add lemon juice, salt as per taste and mix it. Add honey, rocket leaves, kale leaves and mix it well. Add black pepper and mix again. Add quinoa and mix it again. Add pomegranate mixture and mix.

    Garnish with crushed walnuts and serve.
