INGREDIENTS

  • All purpose flour
  • Butter
  • Sugar
  • Milk
  • Carrots grated
  • Orange blossom syrup
  • Baking powder
  • Baking soda
  • Pecans

PREPARATION

    Grate 2 cups of carrot finely Mix 1/2 cup butter with 1 1/2 cup of sugar with a hand blender till sugar and butter dissolve. Add 1/2 cup milk and blend till smooth Sieve together 2 1/2 cups of all purpose flour, 1/2 teaspoon baking powder and 1/4 teaspoon baking soda and add to wet ingredients Fold together the dry and wet ingredients and form a batter Put 1 tbsp orange blossom syrup and a handful of pecans in the batter. Also add orange rind to the batter Grease the baking dish with butter and pour the batter in it Bake at 180 degrees for half hour Let it cool and glaze with buttercream Garnish with orange rind, caramelised pecans and powdered sugar.
