Chef Pallavi’s guest shares a recipe for Maharashtra’s favourite sweet dish, Puran Poli. This Puran Poli is a flatbread stuffed with cooked and sweetened (with jaggery/sugar) chana dal balls infused with cardamom, and it is then fried on a flat tava with dollops of ghee. It is so delicious and delicate that it just melts in your mouth.

INGREDIENTS

  • 1/2 bowl maida
  • 1/2 bowl wheat flour
  • 2 tbsp ghee
  • Salt as per taste
  • Water
  • Boiled chana dal
  • 1 bowl sugar
  • 1 tbsp cardamom powder

HOW TO PREPARE PURAN POLI

    In a bowl, add maida, wheat flour, ghee, salt as per taste, water and prepare a soft dough Add ghee to make it softer Cover the dough with a cloth and leave it to prove.

    Blend the boiled chana dal Add the paste in a pan Add sugar and cook it on low flame until the sugar melts Once the puran is ready, cool it down and add cardamom powder to it.
  3. 3

    Roll out the dough, stuff the puran and seal it Roll it out again Cook it on the pan using ghee from both the sides.
