INGREDIENTS

  • 1 cup washed basmati rice
  • ½ red bell pepper
  • ½ yellow bell pepper
  • ½ cup cauliflower
  • ½ cup carrot
  • 2 tbsp olive oil
  • 2 bay leaves
  • 3 to 4 cloves
  • 1 cinnamon stick
  • ½ tsp cumin seeds
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • ½ tsp turmeric powder
  • 1 tsp asafoetida
  • salt to taste
  • For Garnish: Coriander leaves

PREPARATION

    Heat water in a pan and partially boil the basmati rice. Sieve the boiled rice. Heat olive oil in a pan. Add bay leaves cloves, cinnamon stick, cumin seeds and the chopped vegetables. Toss and add red chilli powder coriander powder, turmeric powder, asafoetida and salt. Mix well. Add the partially boiled rice with salt. Mix well. Serve hot in a plate and garnish with coriander leaves.
