INGREDIENTS

  • FOR Dosa
  • 1 cup semolina
  • ½ cup coconut
  • ½ cup watermelon zest
  • Water; Salt
  • ½ tsp baking powder
  • FOR Filling
  • Oil
  • 1 onion
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 5 to 6 curry leaves
  • Salt
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • 1 cup red and green zucchini
  • FOR Salsa
  • 1 cup Watermelon
  • 1 tsp chilli sauce
  • 1 tbsp coriander leaves

HOW TO PREPARE PUMPKIN WAFFLE WITH PUMPKIN STIR FRY

    For the waffle batter: In a mixing bowl add refined flour, pumpkin puree, grated coconut, powdered sugar, salt, chopped coriander leaves, egg, baking powder, cinnamon powder, milk and oil.

    Mix it well and allow it to rest for 5 to 7 minutes.

    For the stir fry: Heat oil in a pan.

    Add chopped onions curry leaves, peanuts, mint leaves, pumpkin cubes, grated coconut, pumpkin puree, milk, salt and crushed black pepper.

    Mix it well.

    Then, add a ladleful of batter into a waffle maker and leave it for 5 to 7 minutes until it becomes crispy and brown.

    Once the waffle is done remove it from the waffle maker and cut them into a shape of a triangle.
  8. 8

    Serve the waffles with the prepared stir fry.
  9. 9

    Garnish it with tamarind chutney and chopped spring onions.
