  • 1½ cups refined flour
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp clove powder
  • 1 tsp cocoa powder
  • ½ tsp ginger powder
  • 1 tbsp ginger
  • ½ cup pumpkin puree
  • 1 tbsp olive oil
  • 2 tsp brown sugar
  • clove powder for sprinkling
  • buttermilk
  • refined flour for dusting
  • salt
  • 2 tbsp brown sugar
  • 1 tbsp icing sugar

    Mix refined flour, baking powder, baking soda, cocoa powder, ginger powder, chopped ginger and clove powder. Add pumpkin puree, olive oil, buttermilk and knead the mixture to form a soft dough.

    Transfer the dough to a lightly greased bowl and cover with butter paper. Prove the dough for 30 minutes in a warm place.

    Sprinkle refined flour on the countertop and roll the dough into an oval shape. Sprinkle brown sugar and join the ends to form a loaf. Place the dough in the loaf pan and make cuts on the top surface using scissors.

    Sprinkle clove powder, salt and crushed black pepper on the dough. Heat a baking pot on the stove. Place the loaf pan into pot and bake for 20 - 25 minutes.

    Mix brown sugar, icing sugar and buttermilk in a bowl to create a glaze. Demould the bread from loaf pan, and place it in a serving dish. Drizzle the glaze on the bread and slice it.
