Pumpkin Bread
Golden brown loaf delicately spiced with clove and ginger made healthier with pureed pumpkin. These Pumpkin Bread can be served for your next tea party. Also, it is a great snack to beat your hunger.

INGREDIENTS

  • 1½ cups refined flour
  • tsp baking powder
  • tsp baking soda
  • 1 tsp clove powder
  • 1 tsp cocoa powder
  • ½ tsp ginger powder
  • 1 tbsp ginger
  • ½ cup pumpkin puree
  • 1 tbsp olive oil
  • 2 tsp brown sugar
  • Clove powder for sprinkling
  • Buttermilk
  • refined flour for dusting
  • salt
  • 2 tbsp brown sugar
  • 1 tbsp icing sugar
  • Icing sugar

HOW TO PREPARE PUMPKIN BREAD

  1. 1

    Place refined flour baking powder and baking soda in a bowl.
  2. 2

    Add cocoa, ginger powder and chopped ginger and clove powder.
  3. 3

    Add pumpkin puree, 1 tbsp olive oil and buttermilk (you can use soya or regular milk instead).
  4. 4

    Mix well to form a soft yet firm dough.
  5. 5

    Place dough in a clean, lightly greased bowl, and cover with butter paper.
  6. 6

    Pour remaining tbsp of olive oil over the butter paper to prevent the dough from drying while it proves.

    Rest the covered dough for 30 min in a warm place.
  8. 8

    Sprinkle refined flour on the countertop.
  9. 9

    Put the risen dough on the countertop and roll into an oval shape.
  10. 10

    Flatten it along the centre and sprinkle brown sugar.

    Bring together both sides of the dough and shape again into a loaf.

    The brown sugar will now be in the middle of the dough and will help in caramelisation.

    Place the dough in the loaf pan.

    You can use a pair of scissors to add cuts (designs) on top of the dough.

    Sprinkle clove powder, salt and crushed black pepper on the dough.

    Heat a baking pot (see video) on the stove.

    Place the loaf pan into pot and cover with lid.
  18. 18

    Bake for 20 to 25 min.

    Remove from baking pot and rest for 5 min.
  20. 20

    Prepare the glaze by mixing together brown sugar, icing sugar and buttermilk in a bowl.

    Remove the bread from loaf pan, and place in serving dish.

    Drizzle with glaze, slice and serve for tea or breakfast.
