Puff & Rhubarb
This rhubarb puff contains orange slices and is served with orange marmalade.

INGREDIENTS

  • 6 stalks Rhubarb
  • 2 tbsp olive oil
  • 1 cup Orange juice
  • 1 tbsp Castor Sugar
  • ½ cup Rhubarb leave puree
  • Few Orange segment
  • Handful of Dried Orange skin
  • 1 tbsp Brown Sugar
  • 1 Puff Pastry

HOW TO PREPARE PUFF & RHUBARB

    Trim sides of Rhubarb.
  2. 2

    cook in a grill pan with olive oil.
  3. 3

    Add Rhubarb leave puree.
  4. 4

    In a another pan boil orange juice.
  5. 5

    Add Castor Sugar.
  6. 6

    Once it start boiling add in the Orange segment.
  7. 7

    In a motar and pastle add Dried Orange skin, Castor Sugar, Brown Sugar to grind.

    Cut thin strips of Puff Pastry.
  9. 9

    Sprinkle same Castor Sugar.
  10. 10

    ake at 150 C for 5 minutes.
  11. 11

    take the Orange segment out on a plate.
  12. 12

    Sprinkle same Castor Sugar and caramelize using blow torch.
  13. 13

    Serve with Orange segment, Orange marmalade, Celery leaves puree, Puff Pastry strips, cooked Rhubarb puree Micro greens.
