Potatoes Bravas
A classic Spanish dish crisp, olive oil fried potatoes bravas dipped in freshly prepared tomato sauce.

  • For Tomato Sauce :2 red bell peppers
  • 2 tomatoes
  • 1 onion
  • 4 chopped garlic cloves
  • 2 tsp olive oil
  • 2 tsp paprika
  • ½ kg boiled baby potatoes
  • Sea salt
  • water
  • For Garnish: olive oil Parsley

    Wash clean, and parboil the baby potatoes.

    For the sauce, roughly chop the onion and red bell pepper.
  3. 3

    Blanch the tomatoes and deskin them.
  4. 4

    Heat oil in a sauce pan and sauté garlic, onion, red bell pepper, and tomatoes.

    Mash the tomatoes nicely, adjust the seasonings and blend the mixture to a thick, fine paste.

    Heat oil for frying in a deep heavy bottom saucepan and fry the baby potatoes till crisp and brown.

    Sprinkle sea salt.

    Garnish with olive oil and parsley.

    Serve hot potatoes bravas with the sauce.
