Wash clean, and parboil the baby potatoes. For the sauce, roughly chop the onion and red bell pepper. Blanch the tomatoes and deskin them. Heat oil in a sauce pan and sauté garlic, onion, red bell pepper, and tomatoes. Mash the tomatoes nicely, adjust the seasonings and blend the mixture to a thick, fine paste. Heat oil for frying in a deep heavy bottom saucepan and fry the baby potatoes till crisp and brown. Sprinkle sea salt. Garnish with olive oil and parsley. Sprinkle sea salt.
