  • For Tomato Sauce :2 red bell peppers; 2 tomatoes; 1 onion; 4 chopped garlic cloves; 2 tsp olive oil; 2 tsp paprika; ½ kg boiled baby potatoes; Sea salt; water; For Garnish: olive oil Parsley

    Wash clean, and parboil the baby potatoes.

    ; For the sauce, roughly chop the onion and red bell pepper.

    ; Blanch the tomatoes and deskin them.

    ; Heat oil in a sauce pan and sauté garlic, onion, red bell pepper, and tomatoes.

    ; Mash the tomatoes nicely, adjust the seasonings and blend the mixture to a thick, fine paste.

    ; Heat oil for frying in a deep heavy bottom saucepan and fry the baby potatoes till crisp and brown.

    ; Sprinkle sea salt.

    ; Garnish with olive oil and parsley.
