Potato Gratin with Peas Puree

INGREDIENTS

  • For Potato Grating
  • 4 sliced potatoes
  • ½ cup Fresh cream
  • 1 cup milk
  • 4 to 5 garlic cloves
  • Few thyme sprigs
  • Few rosemary sprigs
  • Cracked black pepper
  • salt
  • For The Puree
  • 1 cup peas
  • 2 tbsp milk
  • Cracked black pepper to taste
  • salt
  • For Baking
  • 1 cup cheese grated
  • Cracked black pepper
  • 1 tsp Olive oil

PREPARATION

    Peel and thinly slice the potatoes. Soak the slices in water. To a hot pan, add milk and fresh cream. Add garlic cloves thyme and rosemary sprigs, and cracked black pepper. Add the sliced potatoes to the milk cream mixture. Add some salt. Stir well and cook for some time. To prepare the pea puree, grind the peas. Add milk cracked black pepper, and some salt. Grind well to make the green puree. Transfer the potato milk cream mix to a bowl. Mix with a portion of the green pea puree. Transfer half portion of this mixture to a baking dish. Top with grated cheese. Add the remaining mixture on top of the cheese layer. Evenly spread the cheese again. Top with some more puree on the top. Spread grated cheese cracked black pepper, and a few drops of olive oil. Bake it for 15 to 20 minutes in a pre heated oven at 180C. Potato gratin with peas puree is ready to serve.
