INGREDIENTS

  • FOR Chicken
  • 1 tbsp lemon juice
  • 2 tbsp minced garlic
  • 1 tsp red chilli flakes
  • 2 tsp cayenne pepper powder
  • 1 tsp oregano
  • 1 tbsp coriander powder
  • 250 gm chicken
  • ½ tsp Olive oil
  • salt
  • FOR Piri Piri Sauce
  • 1 tbsp Olive oil
  • 2 tbsp Vinegar
  • 1 tsp oregano
  • 1 tsp red chilli flakes
  • 1 tbsp garlic
  • 1 tsp cayenne pepper powder
  • 2 tsp paprika powder
  • 1 tsp sugar
  • 1 tbsp lemon juice
  • salt
  • FOR Rice
  • 3 tomatoes
  • 1 onion
  • 1 0garlic cloves
  • 2 tbsp Olive oil
  • 2 bay leaves
  • 1 tsp chilli flakes
  • 1 tsp oregano
  • 1 tsp cayenne pepper
  • 2 tsp paprika powder
  • 2 cup soaked rice
  • 1 cup vegetable stock
  • Cracked white pepper
  • salt
  • water

HOW TO PREPARE PORTUGUESE ROAST CHICKEN WITH RICE & PIRI PIRI SAUCE

    Take a little lemon juice in a bowl.

    Add to it minced garlic red chilli flakes, cayenne pepper powder, oregano and coriander powder.
  3. 3

    Sprinkle some salt on the chicken and apply a little oil onto it.
  4. 4

    Marinate the chicken in the mix.
  5. 5

    Place the chicken in a pre heated air fryer and roast it for 40 minutes.

    To prepare the sauce for the chicken, take a little oil in a blender.
  7. 7

    Add a little vinegar salt, oregano, red chilli flakes, chopped garlic, cayenne pepper powder, paprika powder, sugar and a little lemon juice.

    Blend all well.

    The piri piri sauce is ready.

    Transfer it to a serving bowl.

    To make the Portuguese rice, blend tomatoes in a mixer with some water.

    Heat olive oil in a pan.

    Add bay leaves chopped onion and garlic.

    Mix with some chilli flakes oregano, cayenne pepper and paprika powder.

    Pour the blended tomatoes into the mixture.

    Mix well with some soaked rice.

    Add a little salt and cracked white pepper to the rice.

    Pour a cup of vegetable stock into the rice mix.

    Cover it and cook for 40 to 45 minutes.

    The Portuguese rice is ready now.

    Take the chicken out from the air fryer and cut it into pieces.

    Serve the rice and chicken with piri piri sauce.

    Garnish the dish with chopped parsley.
