INGREDIENTS

HOW TO PREPARE PORK VINDALOO

    For marination masala Grind Kashmiri red chillies, roasted cumin seeds, turmeric powder, cinnamon stick, black peppercorns, cloves and sugar.

    Grind them well.

    In a mixing bowl, add pork shoulders, salt and the prepared masala.

    Marinate the pork and allow it to rest for 30 to 40 minutes.

    For the paste: Then, add garlic cloves, ginger and palm vinegar.

    Grind them well and transfer them into a bowl.

    For the pork masala: In the same mixer grinder, grind chopped onions and keep them aside.

    Heat oil in a cooking pot.
  9. 9

    Add the blended paste, black peppercorns, cinnamon stick and cloves.

    Mix them well.

    Add the blended masala paste and the marinated pork into the pan.
  12. 12

    Mix them well.

    Then, add water, mix it well and simmer until the pork is cooked.
