Poached Eggs with Greens

  • FOR Poached Eggs
  • 2 eggs
  • 2 to 3 tsp Vinegar
  • Water
  • FOR Filling
  • 2 tbsp butter
  • ½ bunch spinach leaves
  • 2 to 3 smoked and cooked chicken ham Salt
  • FOR Muffins
  • 1 to 2 tsp butter
  • 2muffins
  • FOR Sauce
  • 1egg yolk
  • ½ tsp caster sugar
  • 7 to 10 black peppercorns
  • 1 tsp cream
  • Salt
  • FOR Garnish
  • Cherry tomatoes
  • Skewer stick

    Take the eggs in a bowl.
  2. 2

    Add a little vinegar in the boiling water and add the eggs into this water to poach them.
  3. 3

    Remove the poached eggs from the water and keep aside.
  4. 4

    Cut the muffins from the centre and make equal parts.
  5. 5

    Heat butter in a pan.
  6. 6

    Add blanched and chopped spinach leaves smoked and cooked chicken ham, and salt.

    Mix well and toast well.
  8. 8

    Transfer this filling to a bowl.
  9. 9

    Heat some more butter in a pan.
  10. 10

    When the butter melts toast the muffin pieces.
  11. 11

    For the sauce, take an egg yolk in a bowl.
  12. 12

    Beat well by placing the bowl on steam.

    Add caster sugar some black peppercorns, cream, and salt.

    Whisk well on steam again.
  15. 15

    The sauce is ready.

    On a tray, place one piece of toasted muffin.

    Place the filling on the top and then place the poached egg.

    Pour a little sauce on the poached egg.

    Cover with the other muffin piece.
  20. 20

    To garnish, place a cherry tomato on top and pierce all layers with a skewer stick and serve.
