INGREDIENTS

  • FOR Picante De Pollo
  • 2 Chicken Leg (With Thighs)
  • 2 chopped Onions
  • 1 tsp Cumin
  • 3 to 4 Garlic Cloves
  • 2 tsp Tomato Paste
  • 1 tsp Aji Amarillo Chilli Paste
  • 2 tbsp Red Pepper Paste
  • 2 tbsp Oil
  • To taste Salt
  • Water
  • .
  • FOR scrambled eggs
  • 1 chopped Tomato
  • 3 Eggs
  • 1 cup Chuno (Dried Potato) (Soaked Overnight)
  • 15 gms Green Peas
  • 20 gms Orange Cheddar Cheese
  • 1 tbsp Oil
  • To taste Salt
  • .
  • FOR Garnish
  • Steamed Rice
  • Spicy Fermented Tomato Salsa

HOW TO PREPARE PICANTE DE POLLO

  1. 1

    Make slight cuts on the chicken legs and marinate with little salt.
  2. 2

    Heat oil in thick bottom pan and sear chicken till it is browned on both sides, keep chicken aside.
  3. 3

    In the same pan, add chopped onion, cumin and garlic paste and fry till brown color.
  4. 4

    In another pan transfer the onion mixture, add tomato paste, aji chilli paste, red pepper paste, salt to taste, some water chicken legs and close the lid and let it cook for 20-25 minutes.

    Put some green peas on the cooked chicken and cook.

    For scrambled eggs:{Boil soaked chuño (dried potato) , Heat oil in pan add boiled chuño, some chopped tomatoes and sauté.
  7. 7

    Add the eggs, salt to taste and make scrambled egg.
  8. 8

    Take out the scrambled egg in a bowl and grate some orange cheddar cheese on it.
  9. 9

    Serve the chicken with spicy fermented salsa, steamed rice and scrambled eggs.

    Picanta de pollo is ready to serve.
