INGREDIENTS

  • For picante de pollo
  • 2 chicken leg (with thighs)
  • 2 chopped onions
  • 1 tsp cumin
  • 3 to 4 garlic cloves
  • 2 tsp tomato paste
  • 1 tsp aji amarillo chilli paste
  • 2 tbsp red pepper paste
  • 2 tbsp oil
  • to taste salt
  • water
  • For scrambled eggs
  • 1 chopped tomato
  • 3 eggs
  • 1 cup chuno (dried potato) (soaked overnight)
  • 15 gm green peas
  • 20 gm orange cheddar cheese
  • 1 tbsp oil
  • to taste salt
  • For garnish
  • steamed rice
  • spicy fermented tomato salsa

PREPARATION

    Marinate the chicken legs with salt.
  2. 2

    In a pan, add oil and sear fry the chicken leg until it turns golden.
  3. 3

    Add the fried chicken in a plate.
  4. 4

    In the same pan, add chopped onion and cook it until it turns brown.
  5. 5

    Add garlic and cumin paste. Add tomato paste, Aji Amarillo chilli paste, red pepper paste and saute.

    Add salt as per taste, water as required, chicken and let it cook.
  7. 7

    In another pan, add oil, chuno, chopped tomato and toss it. Add eggs, salt as per taste and mix it.

    Add the scrambled potatoes in a bowl. Add grated cheese.
  9. 9

    Garnish the chicken with green peas.
  10. 10

    Serve it with hot rice.
