Perugu Charu

Chef Kunal Kapur shares a recipe for an uncooked kadhi called Perugu Charu from Andhra Pradesh. In this recipe, a spicy tempering is added to whisked curd. This thick and spiced buttermilk is savoury and super delicious.

INGREDIENTS

  • 1 cup of rice
  • 4 cups of water
  • 1/2 salt
  • 2 tsp oil
  • 1 cup curd
  • 1/2 tsp fenugreek seeds
  • 1 red chilli
  • 1/2 tsp mustard seeds
  • Asafoetida
  • 1 tsp urad dal
  • 1 tsp chana dal
  • Curry leaves
  • 1/2 tsp chopped ginger
  • 1 green chilli
  • 1 onion
  • 1/2 tsp turmeric powder & Salt

HOW TO PREPARE PERUGU CHARU

    In a bowl, add rice, water and let it soak In a heated pan, add water, salt, soaked rice and let it boil.

    In a heated pan, add oil, fenugreek seeds, red chilli and mix it Add mustard seeds, a pinch of asafoetida, urad dal, chana dal and mix Add curry leaves, chopped ginger, green chilli, chopped onion, turmeric powder, salt as per taste.

    In a bowl, add curd, water and mix it Pour the tadka in the curd mixture and mix it Leave the curry to rest for an hour.
  4. 4

    Strain the rice and serve with the curry.
