INGREDIENTS

  • 750 ml red wine
  • 200 gm caster sugar
  • 2 cinnamon sticks
  • 1 vanilla pod
  • 2 pears
  • goat cheese mousse
  • arugula leaves

PREPARATION

    Heat a saucepan and add the red wine, caster sugar, cinnamon stick, vanilla extract and mix well.

    Poach the pears in the wine mixture for 30 minutes.
  3. 3

    Transfer the poached pear to a plate and deseed it. Fill the pear cavity with some goat cheese mousse using a piping bag. Garnish it with arugula leaves.
