INGREDIENTS

  • 2 cups goan rice boiled
  • ½ cup water
  • 1 cup jaggery grated
  • 1 cup grated coconut
  • 1 tbsp cardamom powder
  • 2 banana leaves
  • water
  • oil

HOW TO PREPARE PATOLEO

  1. 1

    Take Goan boiled rice in a blender.
  2. 2

    Pour a little water and blend it well into a fine paste.
  3. 3

    Put this paste in a hot pan and cook for some time till it becomes thick.
  4. 4

    Heat another pan.
  5. 5

    Put some jaggery into it and add grated coconut and water.
  6. 6

    Add a little cardamom powder for flavour.
  7. 7

    Allow it to cool at room temperature.
  8. 8

    Knead the rice paste to make a smooth dough.
  9. 9

    Grease the banana leaf with oil.
  10. 10

    Flatten the dough on the leaf with the hand.
  11. 11

    Place the jaggery coconut stuffing on top of the dough.
  12. 12

    Roll the dough with the banana leaf.
  13. 13

    Steam the rolls in a steamer for 25 to 30 minutes.
  14. 14

    Once ready, transfer them to a serving plate and serve hot.
