To a bowl add chopped yellow bell pepper, red bell pepper, onion, green bell pepper, and cottage cheese. Marinate the veggies with ginger garlic paste, yogurt, all ground spice, salt, and red chilli powder. Set aside for 10 min. On a satay stick, in alternate layers arrange the marinated veggies. For chutney, heat oil in a pan. Add chopped ginger green chillies, apple vinegar, plum, honey, tomato, salt, orange zest, five spice powder, and mint leaves. Mix well and cook. Heat oil in a grill pan and grill the satay sticks. Serve paneer shashliks with apple and plum chutney. Garnish with red chilli powder, melon wedge, and coriander sprigs.
