Pandi Curry

INGREDIENTS

  • 750 gm of pork
  • Salt as per taste
  • 3 green chillies
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 2 tbsp garlic chopped
  • 1 onion sliced
  • Curry leaves
  • 1000 ml of water
  • 4 cinnamon stick
  • Black pepper
  • 12 Cloves
  • 1 cup of rice
  • 12 - 15 whole black pepper
  • 1 tsp cumin
  • Coriander powder
  • 1 tsp kachampuli

HOW TO PREPARE PANDI CURRY

    In a bowl, add pork, a pinch of salt, chopped green chillies, turmeric powder, red chilli powder Add chopped garlic, sliced onion, curry leaves and mix it well.

    In a heated pan, add marinated pork, water and let it cook.

    In another heated pan, add water, oil, salt, cinnamon stick, black pepper, cloves, green chilli Soak the rice in a bowl Add the soaked rice in the boiling water and let it cook.

    Prepare a paste of whole black pepper, cinnamon stick, cloves, cumin seeds Strain the rice in a bowl Add the masala in the curry and mix it.

    In another heated pan, add coriander powder and roast it Add the powder in the curry and mix it Add kachampuli and mix it well.
  6. 6

    Garnish the curry with curry leaves and serve.
