INGREDIENTS

  • 3 squids
  • 1 red chilli
  • 2 stems of lemon grass
  • 2 stems of lemon grass
  • 2 tsp oil
  • 3 - 4 garlic cloves
  • 3 tbsp soya sauce
  • 1 tbsp lemon juice
  • Cayenne pepper
  • Salt
  • For Garnish
  • Red Chilli, Microgreens, Garlic, Lemongrass

PREPARATION

    Chop the squids. Crush the red chilli. In a heated pan, add oil, chopped garlic cloves and fry until it turns golden in colour. Add soya sauce, lemon juice, salt as per taste, squids, chopped chillies, a pinch of cayenne pepper.

    Add lemongrass and toss it. Dress the plate with squid ink. Garnish with garlic, chilli, lemon grass and micro greens.
