Palak Moongudi ki Chaat

  • ½ cup soaked whole green gram
  • 4 to 5 spinach leaves
  • 1 tsp chopped ginger
  • 2 tsp chopped coriander
  • 1 tsp chopped green chillies
  • 1 ½ tbsp Yogurt
  • 1 tbsp gram flour
  • salt to taste
  • For The Chaat : 1 boiled potato
  • ½ tsp chaat masala
  • 1 tsp coriander
  • 1 tsp onions
  • 1 wedge lemon juice
  • ½ tsp red chilli powder
  • ½ tsp tamarind chutney
  • salt to taste
  • For Garnish: Yogurt as required
  • ½ tsp red chilli powder
  • Lemon wedge
  • coriander leaves

    Blend the soaked whole green gram to a thick paste.

    Transfer the paste to a bowl and add finely chopped spinach leaves, chopped ginger, chopped coriander, chopped green chillies, yogurt, and gram flour.

    Add salt and mix the moongudi paste well.
  4. 4

    Heat oil and fry small portions of moongudi.
  5. 5

    Set aside on a tissue paper.
  6. 6

    Fry the boiled potato and set aside.
  7. 7

    In a bowl, add the fried moongudis and potatoes.
  8. 8

    Add chaat masala salt, chopped coriander, chopped onions, lemon juice, red chilli powder, and tamarind chutney.

    Toss the mixture and arrange potatoes and moongudi on skewers.
  10. 10

    Decorate a plate with yogurt and sprinkle red chilli powder.
  11. 11

    Garnish with a lemon wedge and coriander leaves.
