INGREDIENTS

  • 2 to 3 cups pigeon peas
  • ¼ tsp red chilli powder
  • 1 tsp cumin powder
  • 2 to 3 cup pigeon peas water
  • ¼ tsp turmeric powder
  • ½ tsp cumin powder
  • tsp red chilli powder
  • ½ tsp dry mango powder
  • 2 tbsp kokam
  • 1 cinnamon
  • 1 bay leaf
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp curry leaves
  • 2 to 3 green chillies slit
  • 1 tsp clarified butter
  • jaggery
  • ½ tsp coriander
  • grated coconut
  • grated coconut
  • coriander

PREPARATION

    Heat the pigeon peas water in a pan and bring it to a boil.
  2. 2

    Add turmeric powder, cumin powder, red chilli powder and dry mango powder.

    Boil and add kokam, cinnamon, bay leaf and cloves.

    Heat clarified butter in a different pan.
  5. 5

    Add mustard seeds, cumin seeds, curry leaves and slit green chillies.
  6. 6

    Fry and prepare a tadka.
  7. 7

    Add some tadka and clarified butter to the osaman.
  8. 8

    Stir and add jaggery chopped coriander and grated coconut.

    Mix well.

    Garnish with grated coconut and chopped coriander.

    In the remaining tadka, add boiled pigeon peas, salt, red chilli powder, cumin powder and fry for some time.

    Garnish with chopped coriander.

    Serve the osaman hot with the fried pigeon peas and roasted papads.
