  • FOR Pasta Dough
  • 1 cup whole wheat flour
  • ½ cup all purpose flour
  • ½ cup oats
  • Salt as required
  • 2 eggs
  • 2 tbsp Olive oil
  • Water
  • FOR Pasta
  • 2 onions sliced Salt 5 to 6 garlic cloves 2 tbsp Olive oil ½ cup blanched tomatoes; 5 to 6 spinach leaves ½ tsp crushed black pepper
  • FOR Garnish
  • ½ cup pickled watermelons
  • 2 to 3 Parmesan cheese
  • 2 to 3 basil leaves
  • 1 tbsp ricotta cheese

    For the pasta dough blend whole wheat flour, all purpose flour, and oats.

    Add salt and eggs and blend the mixture to make the dough.
  3. 3

    Roll out the dough using a rolling pin.
  4. 4

    Make a swiss roll and cut into small roundels.
  5. 5

    Open the roundels to make the ribbons of pasta.
  6. 6

    Keep water for boiling.
  7. 7

    Add a pinch of salt and little olive oil to the water.
  8. 8

    Drop the pasta in boiling water and cook for 10 to 15 seconds.

    Strain the pasta.

    Drizzle olive oil and toss it.

    In a pan, heat olive oil.
  12. 12

    Add garlic sliced onion, salt, blanched and chopped tomatoes, spinach leaves, boiled pasta, and black pepper powder.

    Mix well and let it cook.

    Transfer pasta to the serving plate.

    Garnish with pickled watermelon, parmesan cheese shavings, basil leaves, and ricotta cheese.
