Mutton Biryani

INGREDIENTS

  • FOR marinade
  • 750 gm mutton
  • 1 tsp cumin-coriander powder
  • ½ tsp turmeric powder
  • 1 tsp red chilli powder
  • 2 tbsp Yogurt
  • Salt to taste
  • 1 tbsp mustard oil
  • FOR biryani
  • 2 tbsp oil
  • 1 cinnamon stick
  • 2 star anise
  • 1 cup brown masala
  • Water as required
  • 2 cup basmati rice 80% cooked
  • Onions as required fried
  • 2 potatoes boiled
  • 2 eggs boiled
  • ½ tsp saffron
  • 2-3 mint sprigs
  • 10-12 drops screwpine essence
  • FOR garnish
  • banana leaf
  • Coriander sprigs
  • Onion rings

HOW TO PREPARE MUTTON BIRYANI

    Marinate the mutton with curd,turmeric powder red chilli powder, cumin-coriander powder, salt and leave for sometime
  2. 2

    Heat oil in a handi, add whole spices and brown masala
  3. 3

    Add the marinated muttonand water for little gravy
  4. 4

    Cook for 45-50 minutes
  5. 5

    Cook rice up to 80% and add the first layer of rice on top of the mutton in a handi
  6. 6

    Add boiled potatoes, boiled eggs and fried onions
  7. 7

    Add saffron and then another layer of rice coated with fried onions and saffron
  8. 8

    Close the pot and cook for 15 minutes
  9. 9

    Serve with chopped coriander and mint sprigs and onion rings
