INGREDIENTS

  • 1 kg mutton
  • salt as required
  • 3 - 4 tbsp ghee
  • 5 bay leaves
  • 10 black peppercorns
  • 1 - 2 cinnamon sticks
  • 3 black cardamoms
  • 5 green cardamoms
  • 1/2 nutmeg
  • 1 mace
  • 1 onion
  • 1 tbsp ginger paste
  • 1/4 cup yoghurt
  • water as required
  • 1 tbsp saffron strands
  • 1 kg soaked rice
  • 1 kg sugar
  • 1 - 2 tbsp lime juice
  • 1 tsp rose water
  • 1 tsp kewra water
  • 2 tbsp ghee
  • 2 tbsp sugar
  • 8 - 10 dried apricots
  • rose petals

PREPARATION

    Marinate the mutton with salt.

    Heat ghee in a pan and add bay leaf, black peppercorns, cinnamon, black cardamom, green cardamom, nutmeg, mace, onion, ginger paste, mutton, curd and mix well.

    Heat water in a pot and add bay leaf, saffron, soaked rice and let it cook.
  4. 4

    In another pot, heat water and add bay leaves, black cardamom, soaked rice and let it cook.

    Add water to the mutton and let it cook for a while.

    Strain the rice from both the pots and keep them aside in a plate.
  7. 7

    Heat water in a pot and add sugar, lemon juice, rose water and kewra water to make a sugar syrup.

    Spread the white and yellow rice in a pot. For the second layer, spread the cooked mutton pieces. Pour the sugar syrup on the mutton pieces and cover it with another layer of yellow and white rice.

    Sprinkle some sugar and dried apricots on the rice and cover the pot with a silver foil. Cook the rice for 30 minutes.

    Mutanjan is ready to serve. Garnish it with rose petals.
