Moros Y Cristianos
A simple Cuban rice with the classic flavour of cumin, chilli and oregano.

INGREDIENTS

  • 1 tbsp Oil
  • 4 cloves Garlic
  • 2 Bay Leaves
  • 1 Onion
  • 1 Red Bell Pepper
  • 8 Cherry Tomatoes
  • ½ tsp Cumin Powder
  • 1 tsp Dried Oregano
  • 1 tsp Chilli Powder
  • 50 ml Vegetable Stock
  • 200 gms soaked and cooked Black Beans
  • 1 cup Steamed Rice
  • 200 gms Paneer
  • 2 tbsp Corn Starch
  • Pinch of Cumin Powder
  • Pinch of Oregano
  • To taste Salt
  • Pinch of Chilli powder
  • For Garnish: Parsley sprigs.

HOW TO PREPARE MOROS Y CRISTIANOS

    In a pan, heat oil, sauté chopped garlic, bay leaves, add finely chopped onions, finely chopped red bell peppers, chopped cherry tomatoes, cumin powder, dried oregano and chilli powder and sauté.

    Add vegetable stock and black beans, when cooked mix steamed rice.
  3. 3

    Season Paneer with salt, dried oregano, chilli powder, cumin powder and coat in corn starch.

    Heat olive oil and grill the paneer.
  5. 5

    String paneer cubes on satay stick with cut cherry tomatoes.
  6. 6

    Serve Moros Y Christianos with the grilled paneer sticks and garnish with fresh parsley sprigs.
