INGREDIENTS

  • For niter kibbeh (spiced butter)
  • 500 gm unsalted butter
  • 2 tsp chopped garlic
  • 1 tbsp chopped onion
  • 1 tsp fenugreek seeds
  • 4 to 5 black cardamom
  • 1 tsp dried oregano
  • 1 tsp turmeric powder
  • 5 to 8 black pepper corn (whole)
  • 15 gm ginger
  • 1 tsp all spice powder
  • For berbere spice mix
  • 1 tbsp coriander seeds
  • 1 tbsp black pepper corn
  • 1 tbsp fenugreek seeds
  • 1 tbsp chilli powder
  • 3 to 4 cardamom seeds
  • 4 to 5 cloves
  • 1 tbsp all spice powder
  • 1 tbsp ginger powder
  • 2 tbsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • For misr wat
  • 1 chopped onion
  • 1 tsp chopped fresh garlic
  • 2 tbsp berbere spice mix
  • 1 chopped tomato
  • 1 cup red lentil (soaked)
  • oil
  • water
  • For garnish
  • sour cream
  • fresh mint sprigs
  • cheddar cheese

PREPARATION

    In a heated pan, add unsalted butter and let it melt.
  2. 2

    Add chopped garlic, onion, fenugreek seeds, black cardamom, dried oregano, turmeric powder, black peppercorn, ginger, allspice powder and let it cook for 30 minutes.

    In a blender jar, add coriander seeds, black peppercorns, fenugreek seeds, chilli powder, cardamom seeds, cloves, all spice powder, ginger powder, onion powder.

    Add garlic powder, salt and grind it and add it in a bowl.

    In a heated pan, add oil as required, chopped onion, garlic and saute.

    Add berbere spice mix and let it roast.

    Add chopped tomato, red lentils and mix.
  8. 8

    Add water as required and let it cook. Garnish it with ghee, sour cream, mint leaves, cheddar cheese.
