- 1 litre milk
- Sugar: 1 cup + 3 tbsp
- 2 tbsp curd(Jamun)
- First take 1 lt milk in a saucepan and boil it. After 10-15 minutes of boiling, add 1 cup sugar and continue stirring till the milk becomes thick and reduces to half of the quantity (500 ml).
- Take another pan and add 3 tbsp sugar and 2 tbsp water for making the caramel. When the sugar is caramelized, then add half cup hot milk from the reduced milk and continue to stir so that it does not form lumps. This caramelized milk will only bring red colour to the mishti doi.
- Put this caramelized milk into the thick reduced milk in the saucepan.
- Now, Wisk 2 tbsp starter (Jamun). After the reduced milk becomes lukewarm, then add the jamun and stir properly. Then, pour the milk in any closed lid vessel/earthen pots/steel tiffin box or casserole and keep it for 8-10 hours on a warm place. You will get your Mishti Doi. Keep it in the fridge for 2 hours and enjoy!!.
