  • For Masala
  • 2 tbsp olive oil
  • 1 cup chopped onions
  • 1 tsp chopped garlic cloves
  • 1 tsp red chilli powder
  • ½ tsp cumin powder
  • 1 cup chopped tomatoes
  • ½ tsp cinnamon powder
  • 1 cup chopped mixed bell peppers
  • 2 tbsp chopped jalapenos
  • 2 tbsp peanut butter
  • 1 cup chicken broth
  • 2 tbsp dark chocolate grated
  • 8 10 mint leaves
  • salt
  • For Chicken
  • 2 to 3 tbsp Olive oil
  • 2 chicken breastpieces
  • 2 cup smixed bell peppers diced
  • salt
  • fresh mint leaves

    Heat a little olive oil in a pan. Saute chopped onion and chopped garlic. Mix them with salt red chilli powder, cumin powder, chopped tomatoes, cinnamon powder, chopped mixed bell peppers, chopped jalapenos, peanut butter and a cup of chicken stock. Add some grated dark chocolate to the masala mix to give a sweet texture. Stir it well and cook it under a low flame for four to five minutes. When the gravy for the chicken is ready, set the mixture aside to cool at room temperature. Pour the gravy into a blender. Add some mint leaves and strain the gravy into a bowl. Heat olive oil in another pan. Season the chicken breast pieces with salt. Cook both sides of the chicken in the oil. Transfer the chicken pieces to the other pan in which the gravy was prepared. Add the hot oil from the other pan in which chicken breasts were cooked. Pour the masala on top of the chicken. Mix it with the diced mixed bell peppers and cook well. Transfer the chicken pieces with gravy to a serving dish. Garnish with mint leaves and serve.
