INGREDIENTS

  • 3 tbsp oil
  • 1 cup finely chopped onions
  • 1 cup chopped celery
  • 1 cup finely chopped carrots
  • 1 cup finely chopped yellow zucchini
  • 1 cup chopped green zucchini
  • 1 cup chopped tomatoes
  • 1 cup white beans boiled
  • ½ tsp oregano
  • black pepper powder
  • A few basil leaves
  • 1 cup tomato puree
  • ½ cup macaroni boiled
  • Few chopped basil leaves finely
  • salt
  • 3 to 4 cups water
  • A basil leaf
  • parmesan cheese crumbled

HOW TO PREPARE MINESTRONE SOUP

    Heat oil in a pan and saute the finely chopped onions.
  2. 2

    Add these (finely chopped) celery, carrots, yellow and green zucchinis and tomatoes , boiled white beans, oregano, black pepper powder, salt, basil leaves, tomato puree and water.

    Stir to mix all the ingredients well.

    Cook the soup for 15 minutes and then add the boiled macaronis.
  5. 5

    Stir and add finely chopped basil leaves for a fresh flavour.

    Pour the soup in a bowl and garnish with a basil leaf and crumbled Parmesan cheese.

    Serve hot with the crusty soup sticks.
