INGREDIENTS

  • 1 onion
  • 1 red chilli
  • 6 to 7 garlic cloves
  • 1 capsicum
  • 2 tomatoes
  • 1 tbsp oil
  • 1 cinnamon stick
  • 2 tsp cumin powder
  • 1 tsp oregano
  • 2 cups cooked rice
  • salt
  • 2 tsp coriander leaves
  • 2 cups vegetable stock
  • Spring onions

HOW TO PREPARE MEXICAN RICE

    Blend 1 onion, 1 red chilli, 6-7 garlic cloves, 1 capsicum, 2 tomatoes to a fine paste.

    Heat 1 tbsp olive oil in a pan and add 1 cinnamon stick.
  3. 3

    Add the vegetable puree and sauté lightly.
  4. 4

    Add 2 tsp cumin powder, 1 tsp oregano, and 2 cups cooked rice and mix well.

    Add salt as per taste, 2 tbsp chopped coriander, 2 cups vegetable stock and mix.

    Cover the pan and simmer for 10 minutes.

    Mexican rice is ready to serve.
