INGREDIENTS

  • 3 tbsp olive oil
  • 1 cup chopped onions
  • ½ tbsp chopped garlic
  • 2 chopped red chillies
  • 3 bay leaves
  • 2 cups chopped Tomatoes
  • 1 cup chopped red bell pepper
  • ½ cup chopped green bell pepper
  • 4 eggs
  • black pepper powder
  • salt
  • parsley
  • grated cheese

HOW TO PREPARE MEXICAN HUEVOS RANCHERS

    Heat olive oil in a pan and saute the chopped onions till their colour changes.

    Add chopped garlic, chopped red chillies, and bay leaves.
  3. 3

    Mix well.
  4. 4

    Add chopped tomatoes to the mixture and mix.
  5. 5

    Add chopped red and green bell peppers.
  6. 6

    Season with black pepper powder and salt.
  7. 7

    Slightly mash the mixture.
  8. 8

    Cover the pan with a lid and cook the masala for about 15 minutes.
  9. 9

    In the masala, make small gaps and fill with unbeaten eggs.
  10. 10

    Cook it again for 7 to 8 minutes.
  11. 11

    Garnish with chopped fresh parsley and grated cheese.
  12. 12

    Serve with chapatis or parathas.
