INGREDIENTS

  • 3 tbsp olive oil
  • 1 cup chopped onions
  • ½ tbsp chopped garlic
  • 2 chopped red chillies
  • 3 bay leaves
  • 2 cups chopped Tomatoes
  • 1 cup chopped red bell pepper
  • ½ cup chopped green bell pepper
  • 4 eggs
  • black pepper powder
  • salt
  • parsley
  • grated cheese

PREPARATION

    Heat olive oil in a pan and saute the chopped onions till their colour changes. Add chopped garlic, chopped red chillies, and bay leaves. Mix well. Add chopped tomatoes to the mixture and mix. Add chopped red and green bell peppers. Season with black pepper powder and salt. Slightly mash the mixture. Cover the pan with a lid and cook the masala for about 15 minutes. In the masala, make small gaps and fill with unbeaten eggs. Cook it again for 7 to 8 minutes. Garnish with chopped fresh parsley and grated cheese. Serve with chapatis or parathas.
